So today I went and bought a Pig Heart ... that for me has really out of line, I barely eat meat, more like Chicken and Turkey, and not much more. But Hannibal Lecter´s Cooking Guide in the Series lead me to try something I never dreamt of eating before...therefor my respect, I didn´t think cutting a heart to pieces could be this difficult. I made some kind of Ragout. With Cheyenne Pepper and Onions.
So then I went and tasted it...well not bad at all, but still my stomache was a bit spinning. Thoughts came into my mind like the DNA /DNS of a Pig is closest to the Human kind...and a Heart...I don´t know for me it always had a special meaning. But then again...aren´t I also eating Pig Meat...so why should it be strange to eat the heart.
All Hannibals fault...really now what is he doing to me...
...that was my recipe:
About a kilo of pig heart grossly free of tendons and fat for four people, cut into large cubes goulash. Sear in a little hot oil. Then peel and chop into small pieces five, six large onions and two cloves of garlic. Give to the meat and fry until the onions are lightly browned. With boiling water or hot broth Deglaze (with the appropriate amount of water granulated broth admit), season with pepper and marjoram. Cover and simmer for a good hour. Stir 2-3 tablespoons of flour with a little water, add to the boiling readily Sud (just like grandma). Done.
As soon as you smell it, you´ll be like hmm delicious ;-)
